Red Merluzo

 

Young red coupage • Merlot 70%, Syrah 30%


Handpicked. Fermentation in stainless steel at 23 °C. Malolactic fermentation in stainless steel. No aging in barrel.

 

Cherry red wine with violet rim. Aromas of fresh fruit, yogurt and red fruits that soften the overall taste. Light, fruity and smooth on the palate.

White Merluzo

Young white coupage • Chardonnay, Muscat, Malvasía and Merlot

Handpicked. Fermentation in stainless steel at 17 °C

No malolactic fermentation or aging in barrel. The Merlot is vinified as blanc de noir.

Pale yellow with straw-coloured reflections. Nose: good intensity with aromas typical of stoned fruit like peach and apricot. Floral background. Light, fresh and pleasant on the palate, with fruity nuances and a lingering aftertaste.

Chardonnay

 
Monovarietal white • 100% Chardonnay
 
Made from selected grapes from the best plots on our  Binifadet estate, in the south of the island of Menorca,
characterized by its calcareous soil. Handpicked.
 
Fermentation in stainless steel at 17 °C. Cold stabilization to prevent precipitates. No malolactic fermentation or aging in barrel.
 
Intense yellow-coloured varietal wine with golden highlights. Nose: lush and complex, combining notes of ripe stoned fruit with the herbal notes typical of the Mediterranean forest (fennel, thyme and lavender). It is flavoursome and fresh, with a roundness and structure that gives it a lingering aftertaste.
 
Highly recommended for fish and shellfish, the traditional Menorcan lobster stew, rice and white meat.

Aged Merlot

Merlot

Red Reserva • 90% Merlot, 10% Cabernet Sauvignon

Made from selected grapes from de best plots on our Binifadet estate,in the south of the island of Menorca, characterized by its calcareous soil. Handpicked.

Fermentation in stainless steel at 22 ºC. Malolactic fermentation in stainless steel. 10 months in Franch oak barrels and 6 years in the bottle.

Red wine with an intense red color. Mixture of nuances of cherries and wild berries, with toasted hints from the barrel. Broad, meaty and fatty on the palate. Lined with sweet tannins. Long, lingering aftertaste.

We specially recommend it for highly calorific dishes, red meats, stews and soups.

Syrah


Syrah • 100% Syrah
 
Made from selected grapes from the best plots on our Binifadet estate, in the south of the island of Menorca,
characterized by its calcareous soil. Handpicked.
 
Fermentation in stainless steel at 23 °C. Malolactic fermentation in stainless steel. Aged for three months
in American oak barrels.
 
Cherry-coloured red wine with a bright rim. Powerful aromas of red fruit and sweet spices (vanilla, coconut)
characteristic of its aging in barrels. Smooth, flavoursome and creamy on the palate with highlights of ripe red fruit well balanced with smoky and toasted notes, giving it complexity.
 
Highly recommended for calorific meals, spicy dishes and nouvelle cuisine.

Rosé

 

Young rosé • 80% Merlot, 20% Monastrell

Made from selected grapes from the best plots on our  Binifadet estate, in the south of the island of Menorca, characterized by its calcareous soil. Handpicked.

Fermentation in stainless steel at 17 °C. Cold stabilization to prevent precipitates. No malolactic fermentation or aging in barrel.

Pale pink with bright reflections. Nose: the notes of strawberry jam and candied fruit are clearly identifiable; there is also a clear background of white flowers such as jasmine and Mediterranean forest herbs. Balanced and lingering on the palate, with flavours of ripe fruit.

Sparkling rosé

Sparkling Rosé • 80% Merlot, 20% Monastrell

Made from selected grapes from the best fields of our finca at Binifadet, on the South of the island of Menorca characterized by its calcareous soil. Manual harvest.

Elaboration: Traditional method

It has a bright pink colour with red tinges and fine bubble. It is fresh, powerful and fruity on the nose. It has aromas of red fruit and dried flowers, which give complexity. In the mouth it is creamy and refreshing thanks to its fine bubble. The aftertaste is long and tasty, with long lasting touches of fruits.

Sparkling white

Espumoso blancoSparkling White • 100% Chardonnay  

Made from selected grapes from the best fields of our finca at Binifadet, on the South of the island of Menorca characterized by its calcareous soil. Manual harvest.

Elaboration: Traditional method.

It has a bright yellow colour with golden reflections and fine bubbles that emerge like beads. It has a powerful and complex aroma which includes touches of stone fruit, well balanced with bakery and pastry notes typical from the aging in rhyme. In the mouth is fresh, powerful and tasty. The bubble is creamy as well as refreshing.

Sweet muscat

Muscat

Monovarietal young sweet white • 100% Moscatel
 
Made from selected grapes from the best plots on our Binifadet estate, in the south of the island of Menorca,
characterized by its calcareous soil. Handpicked.
 
Fermentation in stainless steel at 17 °C. Fermentation interrupted with cold, leaving 80g./litre of sugar.
 
It matches very well with old and blue cheeses, tea biscuits or just on its own, as an appetizer.
